Sahti is a traditional Finnish beer style that uses barley malts and, to a lesser extent, rye basins, and rarely also wheat and oats. Sahti is traditionally used with fresh yeast, which is also familiar from baking, and is often seasoned with juniper or juniper berries, and sometimes also with hops. Sahti was registered as a genuine traditional product of the European Union in 2002.
On average, the ash is reddish-brown, sweet, strong, turbid, foamless and effervescent, but there is great variety in the manufacturers’ recipes. Sahti has an average alcohol content of 8%. Sahti is a fresh product that is stored in the cold and enjoyed soon after preparation.
Michael Jackson, a well-known beer expert, improved the knowledge of Finnish saht around the world. Jakcson visited Finland many times and, as a friend of local specialties, he spread knowledge about the internationally little-known saw. In his opinion, the ash was “the missing link in the history of beer brewing between Mesopotamia and the present day” and like “a glass of anthropology”.
